      • The two probe thermometers onsite were not accurate and were off by at least 5C.- Ensure that a functional probe thermometer is onsite.

      • The mechanical dishwasher was dispensing 10ppm chlorine. The chlorine feed tube had become disconnected.- Ensure that the chlorine concentration is at least 100ppm during the sanitize cycle.

      • There was food debris and mold growth noted on the splash shield and the dough hook attachment for the floor mixer.- Ensure that the attachments and the floor mixer is thoroughly cleaned and sanitized.
