      • Observation (CORRECTED DURING INSPECTION):
      • Found an open tin can of whole anchovies in the walk-in-cooler. Tin cans will start rusting once opened, the rust will contaminate the food.
      • Corrective Action(s):
      • Immediately transfer the anchovies it a food grade container and cover. During the inspection, staff transferred the anchovies into a cover, stainless steel food container.

      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation:
      • Water leaking from the dishwasher and pooling on the floor. This will attract and breed pests (flies, mice, cockroackes, etc.), and it is slipping hazard. Head chef stated they are aware of the leak and are in the process of sourcing a company to repair the problem.
      • Corrective Action(s):
      • - Repair the dishwasher so it no longer leaks.
      • - Frequently mop up the pooling water to eliminate a damp, wet environment for pests to breed in, and to prevent a slipping hazard.
