- 209 - Food not protected from contamination [s. 12(a)]
- Observation: (CORRECTED DURING INSPECTION) Utensils used as a scoop were observed stored directly inside dry goods containers in the dry storage area. (Public Health Significance)- Scoops or utensils are subjected to bare hand contact when they are stored inside food items as there is a risk of cross-contamination from hands, gloves etc. Such contaminated food items if consumed may result in food-borne illness.
- Corrective Action: Operator was asked to store the scoops in a designated scoop holder and not inside the food containers. Operator promptly removed all the utensils from the food containers. Operator must ensure to store scoops/ utensils separately and not in the food containers.
- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: Inadequate sanitizing rinse solution detected at the time of inspection. No active sanitizer was detected in sanitizer buckets when measured using EHO's test strips. A spray bottle that had undiluted bleach was observed. Operator did not have test strips available at the time of inspection. (Public health significance)- Ineffective sanitizing solution fails to kill pathogens on food contact surfaces, increasing the risk of cross-contamination and possibly leading to food-borne illness. If the sanitizing solution concentration is high, chemical residues may remain on food contact surfaces and dishes, potentially causing chemical contamination. Without test strips, the concentration of sanitizing solution cannot be determined in order to know the effectiveness of the solution thereby compromising proper sanitation of the food contact surfaces.
- Corrective Action: Operator prepared fresh sanitizing solution which was measured to be at 100 ppm. Operator to acquire test strips to ensure adequate chlorine concentration. Education provided on accurate chlorine dilution (half a teaspoon bleach to one litre water) to achieve 100 ppm chlorine concentration. Operator must purchase test strips to verify the concentration of the sanitizing solutions. For now, operator was advised to change the sanitizing solutions every two hours or when the solution appears dirty till the test strips are available.
- 305 - Repeat Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
- Observation: (CORRECTED DURING INSPECTION) The solid back door of the restaurant was observed left open during inspection and only a damaged screen/net door was in place. The screen of that door was visibly ripped in a few places, creating gaps large enough to allow pest entry. Despite being advised to keep the door closed, it was found open again during the inspection. There were no rat traps or baits near this door. (Public health significance)- Damaged screen doors and open doors can allow the entry of pests such as rodents into the food premises. This increases the risk of food contamination and the spread of food-borne illnesses, compromising food safety and sanitation standards. Mice feces and urine can cross-contaminate food and food contact surfaces thereby leading to potential food-borne illness.
- Corrective Action: Operator must ensure that the solid back door remains closed at all times. The ripped screen door must be repaired or replaced immediately to prevent pest entry. Operator was advised to place rat traps/ baits near this door.
- 306 - Repeat Food premises not maintained in a sanitary condition [s. 17(1)]
- Observation: Grease, dirt and food debris were observed accumulated on the floor beneath the stove and grill area. There was visible accumulation of grease above the stove area. Operator stated that the floors are washed and cleaned every night. However, the level of accumulation of food debris and dirt suggested otherwise. (Public health significance)- Accumulated grease and food debris compromises sanitation of the food premises and also can be a pest attractant, increasing the risk of cross-contamination potentially leading to food-borne illnesses. It can also pose a fire hazard compromising the safety of the staff.
- Corrective Action: Operator must do a thorough cleaning of the floor especially underneath the stove and grill area as well as the area above the stove, removing all grease & buildup. Operator was asked to contact the professional cleaning company which cleans the exhaust hoods to assist with the initial cleaning after which, the operator can implement a frequent cleaning schedule to prevent all the build-up.

- Observation: An unused machine was observed stored in the kitchen near the ice machine. Operator stated that the equipment has been unused for a while. Operator intends to test its functionality and either begin using it or remove it from the premises within two weeks. (Public health significance)- Storing unused equipment in food preparation areas can obstruct proper cleaning, create harborage areas for pests and accumulate dust and debris, compromising sanitation and potentially contaminating food, which may lead to food-borne illness.
- Corrective Action: Operator was asked to either use the equipment after properly cleaning and sanitizing it before using it, after testing its functionality. If unusable, operator must remove the equipment from the food premises.

- Observation: Observed that the boxes of food were kept on the floor in the walk-in cooler. Public health Significance - Food stored on the floor poses a risk of contamination due to near contact with floor surfaces and potential exposure to pests.
- Corrective Action: Ensure that foods are stored at least 6" or 15 cm off the floor and protected from contamination.

- Observation: Back door has a gap on the top right side that can allow mice and pests to enter. Public health significance - Mice can fit through gaps as small as a pencil tip. Public Health Significance - Mice feces can carry disease and contaminate food that can lead to foodborne illness.
- Corrective Action: Operator must ensure back door is properly sealed to prevent entry of pests. Operator mentioned that he is planning on replacing the back door.

- Observation: Build-up of food debris, grease, and grime under and beghind the stoves and grill in the kitchen area. Public health significance - This can affect sanitation and attract pests.
- Corrective Action: Regularly clean and sanitize all food contact surfaces, underneath and behind the equipment, and tools and equipment to prevent build up of dirt and debris.
