- Observation (CORRECTED DURING INSPECTION): Both dishwasher on site measured at 0 ppm chlorine concentration during inspection and not able to adequately sanitize dishes.
- Corrective Action(s): Dishwasher in the kitchen was repaired during inspection by replacing the sanitizer bucket. Use this dishwasher to clean and sanitize all dishes until the glasswasher at the bar has been verified functioning by the health inspector. Verify sanitizer strength of both dishwasher with available chlorine test strips at least once daily (or as per approved sanitation plan). Maintain a dishwasher log on site to be verified by the health inspector at the next inspection.

- Corrective Action(s): Do not use this dishwasher for cleaning and sanitizing glassware until verified functioning by the health inspector. All dishes, glassware, and utensils must be cleaned and sanitized in the low-temperature dishwasher in the kitchen. In future, ensure to monitor and record dishwasher sanitizer concentration daily (or as per approved sanitation plan) to ensure it is at 50-100 ppm chlorine at the plate surface.
