      • 1. Cleaning cloths were stored on the counters.2. There was no surface sanitizer prepared for the front service area.3. There was no surface sanitizer prepared for the back kitchen area.Chlorine sanitizer buckets were prepared at 100 ppm and the cleaning cloths were promptly prepared.

      • Used rice scoops were submerged in stagnant water at 18.6°C in the front service area.The rice scoops were promptly washed using the 3-compartment sink dishwashing method and stored in an ice bath at 0°C.Ensure serving tongs/utensils are stored in ice water between uses at 4°C or less, in hot water between uses at 60°C or greater, stored in a sanitizer solution at the correct concentration (100ppm Chlorine/ 200ppm QUATs), or continuously switch out serving utensils with new utensils.
