      • Backdoors that access the outside have gaps underneath the doors. This could permit the entry of pest activity.
      • Seal all potential entry points to prevent the entrance of pest/rodent activity. * Implement door sweeps. Comments Routine inspection conducted. Actions items: - Don't store measuring cup handles submerged in the dry ingredients. - Some curtains separating processing rooms is discoloured (yellow from aging). * Ensure equipment is smooth, non-absorbent, easy to clean. - Implement an environment sampling program that tests pathogens of concern. Comments: - Overall sanitation of the facility was satisfactory. - Plant areas: smokehouse, curing, steam plant, spice rooms, packaging. - Smokehouse utilizes maple wood (hardwood). - Regular sanitation procedures conducted daily for processing equipment (clean-in-place). * Implement physical logs for verification. - Hand sinks are fully equipped with hot/cold running water, liquid soap, paper towels. - Sparta-san sanitizer (pre-mixed solution) utilized for processing equipment, floors, and walls. - Facility doesn't have test strips onsite. However, the manufacturer company provided a test kit (unknown purpose, potential calibration) for acidic and alkaline cleaners. - Walk-in freezer registered below -18°C. - All processing rooms are held at or below 4°C (actual reading: 2.7°C). - Temperature logs are maintained 2x daily. - No signs of pest activity onsite. Facility is contracted with third party pest control. - Some UV fly traps situated around the premises. - Operator is gradually replacing lighting/bulbs around the facility. * Ensure the processing rooms are adequately lit to aid in cleaning/sanitizing food equipment. - Finished products are adequately labelled for traceability purposes. - Curing agents are monitored: side bacon doesn't exceed 120ppm nitrites; dry curing is maintained between 200-300ppm.
