    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • 1) Many bottles of pop were found stored on the floor in the back storage area. Ensure that bottles of beverage are stored at least 15cm off the floor to prevent contamination with food debris. Remove all food items from the floor. 2) Packages with bottled water were found for sale on the floor in the main area of the store. The operator moved the packages to a shelving unit during the inspection. Ensure that packages of water and other foods are stored off the floor at least 15cm (6in) to prevent contamination with floor debris.

      • 1) Several rolls of paper towel near the front handwash sink, bathroom, and in the back area were stored on food counters or shelving units. Ensure that paper towels have a proper dispenser to prevent contamination of paper towels that can transfer to clean hands and surfaces.

      • 1) The weatherstripping on the door that exits into the car wash is not positioned to prevent entrance into the store. Reposition or replace the weatherstripping to prevent the entry of pests. 2) There is a gap in the weatherstripping on the front doors of the facility. Ensure that there are no gaps in the weatherstripping to prevent the entrance of pests. Repair or replace the weatherstripping.

      • 1) Tiles in the bathroom are missing. Repair the walls in the bathroom. 2) The rubber moulding in the bathroom was in disrepair. Ensure that the moulding is installed properly. 3) The area near the door to the car wash is unfinished and the rubber moulding is missing. Ensure that the wall is finished such that the surface is easy to clean, smooth and impervious to moisture.

      • 1) The floor in the front cash area is in disrepair. Ensure that floor surfaces are smooth, impervious to moisture and easy to clean. Repair the floor.2) Floor tiles are missing in the bathroom. A pipe is projecting from the floor. Ensure that the bathroom floor is repaired so that it is smooth, easy to clean and impervious to moisture. Cover the pipe so that is does not accumulate floor debris or cause tripping.

      • 1) The outdoor ice machine appeared rusty and had a build up of ice inside. Ensure that the outdoor ice machine is cleaned and sanitized regularly and the ice build up is removed. Repair the rust on the unit or replace the unit. 2) A chest freezer with ice cream packages had a build up of ice. Ensure that freezers are maintained to prevent the build up of ice that contained non potable water that can contaminate food.

      • 1) There is a large accumulation of food debris and dust behind cooler units in the front of the facility and behind shelving units in the back storage area. Ensure that all areas are cleaned and sanitized to prevent the harbourage of pest and food contamination. Add these areas to the written cleaning checklist to ensure regular completion. 2) The vents appear dusty throughout the facility. Ensure that the vents are cleaned and sanitized regularly to prevent food contamination. 3) An area near the front handwash sink has a cupboard with a garbage can that had dried on food debris and appeared dirty. Ensure that the garbage can and entire cupboard is cleaned and sanitized regularly to prevent the attraction of pests and food contamination. Clean the cupboard and garbage can.

Ensure that the back storage area is organized and food is kept off the floor. Keep expired goods away from in house stock. Remove all clutter from the back area to prevent harbourage of pests. Clean the floor debris and mouse droppings using proper precautions.
