    • Critical Improper Cleaning, Sanitizing of Equipment and Utensils
      • Sanitizer spray bottle measured at 0 ppm chlorine
      • Operator prepared new batch at 200 ppm chlorine. Comments Follow-up to inspection on March 16, 2026. Hand wash stations are fully supplied. NOTE: install paper towel dispenser so that paper towels remains at the hand washing station. Rodent droppings have been cleaned from the top of dishwasher sanitizer bucket measured 200 ppm chlorine. *Dishwasher sanitizer concentration recorded as ppm in logbook, but missing two days of entry, ensure dishwasher sanitizer concentrations are recorded in the log book on a daily basis.

    • Critical Improper Cleaning, Sanitizing of Equipment and Utensils
      • Surface sanitizer measured higher than 500 ppm. Quat sanitizer should be 200-400 ppm. Verify with test strips.
      • Bleach is available for use, suggested using 1 tsp. bleach with 1 L. water to prepare sanitizer at 100-200 ppm chlorine. Staff prepared sanitizer at 200 ppm chlorine.
    • Improper Sanitary Facilities
      • Hand wash station missing paper towel and hand soap.
      • Note: Hand sinks should be fully stocked with soap, paper towels, hot and cold water at all times. Staff obtained new soap dispenser and paper towel.
    • Inadequate Insect / Rodent Control
      • Rodent droppings spotted on top of dishwasher and in some plastic takeout tupperwares.
      • Deep cleaning should be completed to remove droppings and areas affected must be sanitized with one part bleach to nine parts water. Tupperwares were discarded at time of inspection.
    • Operations and Maintenance/Other
      • Low temperature dishwasher sanitizer recorded as temperature in log book.
      • Please verify sanitizer concentration with test strips and record values in ppm chlorine. Comments Routine health inspection conducted alongside a Foodborne Illness investigation. No staff illness has been recorded, temperature log reviewed for the month of March, no issues with cold holding and hot holding temperatures. More than one FoodSafe certified staff onsite. Coolers at 4°C or less and hot foods at greater than 60°C. Pest control provided on a routine basis. Bathrooms are clean and fully stocked.
