- Ensure temperature logs are taken in the morning. Move high risk foods to functioning cooler if cooler maintains 7°C or more. Comments Routine inspection conducted. Hand washing station is supplied with hot water, hand soap and paper towel. Quats surface sanitizer measured 200ppm. High temperature dishwasher measured 74°C, at the plate level. Hot-holding units measured 60°C or above. Walk-in cooler 4°C or less, food is protected from contamination and food is labelled and dated. Freezers are -18°C or less.
