- The sanitizer spray bottle in the front area had no bleach content. The concentration of bleach must be maintained between 100 to 200ppm to effectively sanitize food contact surfaces. Make a new sanitizer solution every day and test with the chlorine test strips. The operator remade the sanitizer solution at the time of the inspection and was tested at 100ppm.

- No food safe sanitizer was prepared at the time of the inspection. Operator did not have a sanitizer supply available for use. A quats solution for use was made from a nearby vendor's quats supply.
