    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The sanitizer spray bottle in the front area had no bleach content. The concentration of bleach must be maintained between 100 to 200ppm to effectively sanitize food contact surfaces. Make a new sanitizer solution every day and test with the chlorine test strips. The operator remade the sanitizer solution at the time of the inspection and was tested at 100ppm.

      • Quat sanitizer measured 400PPM. Dillute sanitizer solution so that it measured 200PPM quats.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Quat test strips were unavailable upon request. Ensure that test strips are available for each type of sanitizer that is used in the facility.

      • No food safe sanitizer was prepared at the time of the inspection. Operator did not have a sanitizer supply available for use. A quats solution for use was made from a nearby vendor's quats supply.
