      • At the ice bath set up by the cookline, food items were sitting on top of the ice.If using ice baths to cool or hold cold, ice and water must come up to the level of the food in the containers.

      • An insert in the north food preparation cooler across from the cookline was over stacked with pork belly. Over stacked pieces had an internal temperature of 11-13 degrees Celsius.Over stacked pieces were discarded. Ensure that inserts aren't over stacked, as food above the fill line won't be adequately cooled.

      • The inside surfaces of the ice machine door and the frame of the ice machine door had hard water and/or soil accumulation.Clean the ice machine door and door frame. Ensure these areas are cleaned on a regular basis.

      • Sanitizer spray bottles were unlabeled.Battles were labelled during inspection. Ensure that all chemical bottles are labeled to identify their contents to help prevent accidental misuse.

      • There was some grease and food debris accumulation on floors near the grease traps.Clean floors near the grease traps and ensure these areas are cleaned on a regular basis.
