    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • A clean-in-place sanitizer bottle was measured at the correct concentration of 100 ppm chlorine (non-scented bleach).Another spray bottle and a clean-in-place bucket used for storing cleaning cloths were measured at 0 ppm chlorine. Sanitizer solutions were remade and confirmed to be within the correct range of 100–200 ppm chlorine.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • The front door had small holes drilled at the top right corner on the side opposite the doorknob.Please ensure all openings are sealed so the door forms a tight seal and prevents potential pest entry.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Cutting boards were observed to be overworn and discolored.Please ensure cutting boards are repaired or replaced as needed, and that their condition is regularly monitored to ensure they remain in good repair and able to be effectively cleaned and sanitized.
