      • Observation (CORRECTED DURING INSPECTION): The following items were observed at ambient temperature:
      • - One small container of beef fry: internal temperature 30C, cooked 3 hours ago per staff.
      • - One larger container of beef curry: internal temperature 42C, cooked 3.5 hours ago per staff.
      • Staff stated that items were still in the process of cooling before placing into the cooler. However, business operates as a ghost kitchen and is open until 10pm, and these items were also being served for orders that were coming in. Could not verify how long items would stay out for, nor when they were cooked (no approved time tracking system in place). No hot holding unit or prep cooler available at station. Ghost kitchen operates until 10pm.
      • Corrective Action(s): Ensure food is cooled from 60C to 20C within two hours or less, then from 20C to 4C within the next four hours to limit the growth of potential pathogens. Verify temperatures with a sanitized and calibrated probe thermometer.
      • Operator stated that a hot holding unit would be obtained to keep food at the station at 60C or more.

      • Observation (CORRECTED DURING INSPECTION): A large container of beef curry stored in the walk-in cooler was measured at an internal temperature of 12C to 14C. Beef curry was cooked yesterday.
      • Corrective Action(s): Discarded. Ensure potentially hazardous food is cooled from 60C to 20C within 2 hours or less, then from 20C to 4C within the next 4 hours or less, in order to limit the growth of potential pathogens. This includes spore-forming bacteria that can survive cooking temperatures, and may later produce heat-stable toxins.

      • Observation (CORRECTED DURING INSPECTION): The following potentially hazardous foods were observed at ambient temperature. Unable to verify length of time foods were in the danger zone (between 4C and 60C). Internal temperature of food items was approximately 20C (ambient temperature).
      • - Bowl of rice.
      • - Container of cooked chicken masala.
      • - Small bowl of raw egg white (used as egg wash in baking).
      • Corrective Action(s): Items were discarded. Ensure cold potentially hazardous food is maintained at 4C or less in order to limit the growth of potential pathogens.

      • Observation (CORRECTED DURING INSPECTION): A few containers stored at the station had food debris on them.
      • Corrective Action(s): Containers were re-washed and sanitized at the time of inspection. Ensure all food equipment and utensils are properly washed and sanitized. Food debris may contain potential pathogens that can cause foodborne illness.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer at station measured at 100 ppm quats or less. 200 ppm is required for effective sanitizing. Note: Station in use during inspection.
      • Corrective Action(s): Sanitizer discarded, 200 ppm quats sanitizer provided. Ensure station is re-sanitized. Ensure sanitizer is maintained at safe and effective concentrations for sanitizing surfaces to kill/inactivate potential pathogens.

      • Observation (CORRECTED DURING INSPECTION): Employee/chef observed scratching face with gloved hands.
      • Corrective Action(s): Gloves discarded, employee directed to wash hands. Ensure that proper hand hygiene practices are followed at all times and hands are washed as often as needed to limit potential contamination of food.

      • Observation (CORRECTED DURING INSPECTION): - raw meat stored over ready-to-eat food (vegetables) in walk-in cooler
      • - mango pulp observed in an opened can in the walk-in cooler. Pulp discoloured.
      • Corrective Action(s): - Food was re-arranged so that all the raw meat/eggs were stored on the bottom shelf and not above ready-to-eat food. Ensure raw meat/eggs are not stored above ready-to-eat food as it may leak onto food below.
      • - Mango pulp discarded. Ensure that once cans are opened, the contents are transferred into a covered food grade container if the food is to be stored. Cans can oxide/rust over time and contaminate food.

      • 502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
      • Observation: The only employee (food handler) working on site in the operator's absense did not have FOODSAFE Level 1 or equivalent certification.
      • Corrective Action(s): In the operator's absence, at least one staff member on duty must have valid FOODSAFE Level 1 or equivalent certification. Have staff certified as needed. Date to be corrected by: July 25, 2025.

      • Corrective Action(s): Ensure raw meat and raw eggs are not stored above ready-to-eat food as they may leak onto the food below. Ready-to-eat food may not be cooked to kill any pathogens that may potentially contaminate food. Relocate raw eggs today.
