- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Industrial vinegar (15% acetic acid) was being used on counters and tables as a sanitizer. Please note, evidence does not support the use of vinegar as a sanitizer as it has not been shown to be effective in killing bacteria or viruses. Please ensure an approved food surface sanitizer such as Quaternary Ammonium Compounds (QUATS at 200ppm), chlorine bleach (100 ppm, 1/2 tsp bleach/liter of water) or hydrogen peroxide are being used. Please also ensure you have appropriate test strips to test the concentration on a regular basis.Please note, the use of vinegar and other "alternative" sanitizers has been observed multiple times in the past.
