- 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
- Observation: (CORRECTED DURING INSPECTION) One of the white cutting boards are discolored with knife marks. (Public Health Significance) - discolored cutting boards with knife marks may signify the presence of bacterial biofilm, potentially contaminating foods.
- Corrective Action: Operator immediately discarded the cutting board. Operator to ensure the surface of all cutting boards is smooth and without discoloration.
- 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
- Observation: A dried sausage was found behind the deep fryers. Water is pooled near the dishwasher. The weathering strips of the back door was worn out. (Public Health Significance) - the presence of food and water and openings to the outside can allow the entrance and breeding of pests, increasing the chance of food contamination.
- Corrective Action: The operator immediately removed the sausage. Operator to repair the weathering strip of the back door.
- 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
- Observation: The fans in the walk-in cooler, the upright cooler and the coffee servery were dirty . Ice was built up on the ceiling of a walk-in freezer. Debris were found inside the two deep fryers. Pipes near the exhaust hood were dusty. (Public Health Significance) - dust, ice and debris built up in the food preparation or storage areas can increase the chance of food contamination.
- Corrective Action: Operator to clean and ensure all the refrigeration units, pipes and equipment are in sanitary condition at all times. Operator immediately removed all foods underneath the ice built-up.
