      • Corrective Action(s): Ensure all handwashing sinks are well equipped with hot and cold running water, liquid soap, and paper towels. Do not use bar soap as this can be an area for cross contamination.

      • Observation (CORRECTED DURING INSPECTION): Multiple inserts of sauces stored under ice bath in the kitchen measured at internal temperature of between 9-12C. Shift work started an hour ago. Soaked chickpeas in water observed to be stored at room temperature.
      • Corrective Action(s): Transfer all food under cooler able to hold an air ambient temperature of 4C or lower.

      • Observation (CORRECTED DURING INSPECTION): Yogurt noted storing at 10.0C in the cold hold buffet table.
      • Corrective Action(s): As per operator, buffet food are put out from 11:00 AM - 2:30 PM. Discussed with operator that these open cold hold unit usually have trouble maintaining cold food at 4.0C or below. Therefore, any left over cold potentially hazardous food, especially the yogurt, must be discarded after buffet ends at 2:30 PM.
      • In general, it is a good practice to never return any buffet food on the self-service line back to the refrigeration units or to be served again as you do not know if they were contaminated when displayed.

      • Observation: 1. Flats of raw eggs were observed to be stored on the top shelf above produce in the walk-in cooler.
      • 2. Improper dispensers, bowls with no handles, were stored and used as dispensers in bulk food containers such as flour and condiments. **Note: This is a repeated violation**
      • 3. 5+ containers of food in the walk-in cooler were stored unprotected/ uncovered.
      • Corrective Action(s): 1. Reorganize the shelf so that raw eggs, which are to be treated like raw meat, must be stored on the bottom shelf or away from produce/ cooked/ ready-to-eat food. Raw eggs may contain Salmonella so they must be stored in a manner to prevent potential cross-contamination.
      • 2. Remove all improper dispensers/ single-use items. Purchase proper dispensers, with handles, and store in a manner where the handles do not come into contact with food.
      • 3. Any food that is not for active service must be stored protected with a lid/ cover/ plastic wrap.

      • Observation: BUSH Permicol Synthetic Food Color Orange Red Powder was found in the kitchen prep area. As per operator, this is old and not used in their cooking.
      • Corrective Action(s): Please note that this food coloring is unfit for human consumption as per their product label which state that they are meant to be for external use only. Please either discard or remove the food coloring off the premises immediately.

      • Observation (CORRECTED DURING INSPECTION): Observations: Knives were observed with food debris on blade parts and stored in knife storage inserts beside food cutting/prep work area.
      • Corrective actions: Clean and sanitize knives with food debris still stuck on blade parts prior to storage. Food debris and residue on knives may lead to contamination of food. Operator washed and sanitized dirty knives at time of inspection.

      • Observation (CORRECTED DURING INSPECTION): Observations: Frozen bag of meat observed to be sitting at room temperature in a bowl by food prep area. Staff stated meat item was being thawed for later use.
      • Corrective actions: Thawing should be done inside cooler or under cold running water bath to ensure no temperature abuse is done. Improper thawing may lead to growth of pathogens and production of toxins due to temperature abuse. Education was given on proper thawing procedures and meat item placed in running cold water bath for thawing.

      • Observation: Observations: Small amount of mouse/rodent droppings observed in dry storage area underneath dry storage bins.
      • Corrective actions: Clean and sanitize aforementioned are to prevent accumulation of pest droppings. Rodent/mouse dropping may be an indication of pest issue and may cause contamination to food.

      • Observation (CORRECTED DURING INSPECTION): Observations: Single use containers observed to be used a scoops for flour and some spices stored in containers in kitchen prep/cooking area.
      • Corrective actions: Remove all single use items without handles and replace with food grade scoops with handle. Single use items cannot be properly cleaned and sanitized. Lack of handle may also increase chances of hand contact with food. Both issues may cause contamination to food. Operator removed all single use items used as scoops at time of inspection.

      • Observation: Observations: Door/lid to chest freezer located in area near entrance to kitchen observed to have parts falling off and taped to hold up. Tape was used to keep parts from falling underneath lid.
      • Corrective action: Call service/maintenance to ensure equipment is in good working order. Operator stated maintenance was called and waiting for response. Chest freezer lid that is not in good working order may be at risk of raise in temperature due to insulation issues.
