      • 2) Plates by the waitress station need to be re-washed, do not store them in this location
      • 3) Ensure all holes are sealed
      • 4) Do not leave food out
      • If pest control companies are not doing their job properly, hire ones that can.

      • 1) This must be cooled within 2 hours. Staff stated this was made an hour prior to inspection started - immediately place in ice bath.
      • 2) Pakora is in a single layer - good. This has reached 25C now, place in cooler to accelerate cooling process.

      • 1) Do not store foods directly in ice as the outside of this bottle may be contaminated, and will in turn contaminate the ice. Also, this bottle is glass; do not store in ice in case of chipping

      • Observation (CORRECTED DURING INSPECTION): Large container of dahl makhni in walk-in cooler measured 8C. Staff stated this item was made yesterday.
      • Corrective Action(s): Food must be cooled from 60-20C in 2 hours or less, and from 20-4C in 4 hours or less. Cool using an ice bath and separate large items into smaller containers to facilitate cooling.

      • 1) Pasta salad in buffet line measured 21C. Buffet table is only a hot holding unit. Staff stated they place cold water and ice into the well. Pasta salad is discarded at the end of the buffet period (3pm).
      • 2) Two containers of rice measured 18C; staff stated this was taken out from the cooler, to be reheated in the microwave.
      • Corrective Action(s):
      • 1) Pasta salad must be held at 4C or colder. If pasta cannot be kept cold by using ice, you must discard the item after two hours. (Ex. if the buffet period is 11-3pm as advertised, then the portion put out at 11am must be discarded at 1pm, and the next portion discarded at 3pm).
      • 2) Keep rice in the cooler until needed for re-heating.

      • 1) Raw eggs must be stored below and away from cooked foods.
      • 2) Do not place food containers directly onto the floor. The floor is dirty and now has contaminated the bottom of the food container; once you place this food container onto the counter, the food contact surface is now contaminated.

      • 2) Repair or replace cooler so that it is able to achieve and maintain 4C. You may use the upright one door glass cooler for tonight only. Repair tech called at time of inspection.
