- Observation (CORRECTED DURING INSPECTION): Can opener blade observed to have built-up of food debris. Dough mixer bowl and arm observed to be in unsanitary condition. Operator did not wash the equipment after closing shift.
- Corrective Action(s): Clean aformentioned items. Can opener blade and dough mixer bowl and arm must be cleaned after each use or every 4 hours of continous use which ever is lesser. Do not leave unwashed equipment overnight but must wawsh after each use.

- Observation (CORRECTED DURING INSPECTION): Upright cooler in the back prep area was noted with an internal air temperature of 18C. Food was stored between 12.8C - 15.0C in this cooler.
- Corrective Action(s): Operator discarded all cold potentially hazardous food at the time of inspection, this includes: 3 containers of tomato sauce (12.8C), samosa, alfredo sauce, individual tzatziki sauces, raw chicken (13.0C), 2 containers of yogurt, 2 x 946 mL of whipping cream, 1 bag and 1 container of cooked chicken, 2 containers of feta cheese, 1 container of beef and 1 container of gravy.
- At this time, do not store any cold potentially hazardous food items in this cooler unit.
- Service the unit. Ensure that it must be able to maintain at 4.0C or below.

- Observation (CORRECTED DURING INSPECTION): Meat sauce was noted at 10C in the hot hold unit.
- Corrective Action(s): All cooled food intended for hot holding must be reheated to 74.0C either by microwave or stove top or any other quick cooking methods prior to placing into a preheated hot hold unit.
- Staff removed the meat sauce and reheated the sauce in the microwave during the inspection.

- 2. Paper towel dispenser noted broken in the staff/ customer washroom.
- Corrective Action(s): 1. Operator and staff was aware that the unit is broken. No cold potentially hazardous food was being stored in this unit. Operator has called in the machine for servicing.
- 2. Paper towel is made available however paper towel must be stored protected to prevent potential contaminating of the hands after cleaning.

- Observation (CORRECTED DURING INSPECTION): One cutting board noted with deep cuts on both sides and with black stain in cuts. Operator stated that they sanitize with bleach water. However, this board is impossible to clean. Operator discarded this cutting board at the time of inspection.
- Note: Ensure to sanitize cutting boards between uses. Wash cutting boards with soap and water first then sanitize using 100 ppm bleach water.

- Observation: 1- A drip tray noted in pizza line cooler. This tray has mold and black build ups. Food stored in this cooler is too close to this tray.
- 2- Door handles, rubber seals require cleaning. Build ups noted on rubber seal and inside pizza line cooler.
- Corrective Action(s): 1- Remove tray, clean and then sanitize this tray before reuse. Ensure to keep this drip tray clean.
- 2- Clean and sanitize all door handles and rubber seals on pizza line cooler. Ensure no build up or soil on equipment left.
