      • Observation (CORRECTED DURING INSPECTION): AGAIN large portions of potentially hazardous foods being stored at room temperature that are not being time tracked -pre-cooked fried chicken in 5 large containers next to the fryers with temperatures at 20 deg C brought out of the fridge about an hour ago
      • This same issue was cited for the cooked potato balls at room temperature back in the April 1, 2025 inspection
      • Corrective Action(s): Operator discarded the fried chicken.
      • Again only small portions during rush periods are allowed otherwise the food must be time tracked for a maximum of 2 hours at room temperature then discard

      • food temperature in direct sunlight showing 8.5 deg C product was said to be placed there an hour ago
      • NOTE: this was cited in last year's June 23, 2023 inspection
      • B) cut cherry tomato insert was double stacked in a small preparation cooler across from the stove -internal temperature at 12.2 deg C and worker indicates it was from the morning shift
      • Corrective Action(s): A) No fridge in direct sunlight will be able to maintain adequate temperatures. You must be covering the windows with an opaque material.
      • Operator covered the top and temperatures went down to 4 deg C
      • Repeat infractions will require increased enforcement such as ticketing ensure staff are maintaining the covers during sunny weather
      • B) discarded the cherry tomatoes. Do not double stack inserts in preparation coolers this is above the fill-line!

      • -bakery retail section alongside the walls

      • Checked last pest report from Westside Pest Control -January 28 -one mouse caught in the kitchen (come in bi-weekly)
      • Corrective Action(s): Clean and disinfect ALL areas where droppings are sighted.
      • Assign a worker to check EACH MORNING with a high powered flashlight the entire premise for rodent activity
      • Any foods left out overnight -all soft packaged foods such as plastic, paper, nylon packaged foods in rodent proof containers -this includes for the back kitchen and dry storage room
      • Maintain pest control services -correct any deficiencies noted in the reports -forward future reports to me
