      • Observation:
      • Observed mice droppings along the base of walls in the kitchen and the 2-comp sink (manufacturing area). Mice and droppings carry diseases, these disease could contaminate food.
      • Corrective Action(s):
      • - Sweep up the mice droppings every day.
      • - Wash the floor and the base of walls with hot soapy water, and then sanitize with a bleach and water solution (mix 1 Tbsp bleach with 4L hot water). Do this every night.

      • Observation (CORRECTED DURING INSPECTION): Small line cooler was at 6-8C at start of inspection. Unit was adjusted and has since come down to 3.5C.
      • Corrective Action(s): Ensure this unit maintains 4C or less at all times to reduce the growth rate of any pathogens in the food.

      • Observation (CORRECTED DURING INSPECTION): Hot water bath in hot holding unit was 80C however the temperature of the food was around 40C. Food was cooked earlier this morning and was put into hot holding unit hot.
      • Corrective Action(s): Food in the hot holding unit must be kept at 60C or higher. Ensure that the hot water levels inside the unit are high enough to touch the bottom of the containers. Also ensure that the food is hot (>60C before it is put into the hot holding unit).

      • Observation (CORRECTED DURING INSPECTION): Cut vegetables stored in lince cooler. Cooler was at 13C. Owner stated that a technician is coming in later today.
      • Corrective Action(s): Vegetables moved to alternate cooler. Discontinue use of this cooler until it can maintain 4C or less.

      • Corrective Action(s): Recook food and only put food back into this hot holding unit when it reaches above 60C. Block of plug that does not work to prevent staff from using it.

      • Observation (CORRECTED DURING INSPECTION): Spray bottle labelled as sanitizer had no detectable level of sanitizer and contained another chemical that could not be identified.
      • Corrective Action(s): Bottle dumped out during inspection and replaced with a bleach solution. Ensure that all chemicals are accurately labelled for quick and accurate identification.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer solution in spray bottle had no detectable level of sanitizer. Contents of bottle of bleach used appeared water like without colour. Straight bleach tested and was 200ppm.
      • Corrective Action(s): Use the bleach without dilution for now until a new bottle of bleach is bought. Purchase a new bottle of bleach by Thursday Jan 12, 2023. Recommend buying a smaller bottle of bleach so that it is used up faster and will not lose its concentration over time.

      • Observation (CORRECTED DURING INSPECTION): Cooked rice in plastic container that was put inside the metal insert of the hot holding unit. Rice was 25C internally. Owner stated that this rice would have been cooked first thing this morning which is >5 hours ago.
      • Corrective Action(s): Discard rice and ensure that all rice kept in the hot holding unit is kept directly in the metal container. Product voluntarily discarded during inspection.

      • Call a professional exhaust company to clean the canopy, and ensure to follow the service sticker schedule.
