    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The QUATs spray bottles throughout the facility were strong (>400 ppm) and diluted during the inspection. As per the manufacturers instructions, mix 4 ml per litre of water for a food grade solution.Discussed switching to plain bleach and water (1/2 teaspoon per litre of water). Ensure test strips are available for your sanitizer of choice.
    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Employees were not washing hands between changing gloves - discussed hand hygiene & glove use with managers and staff. Glove use is not required unless the food handling has a cut or is wearing a bandage.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Inspector inquired about dishwashing procedure with staff who did not indicate a sanitize step was occurring in their 3-compartment sink. Inspector explained the requirement for a sanitize step to employee and management. Posters will be emailed to be displayed at the sinks.

      • The scoop in the ice machine had a build-up of mould on it.Operator immediately removed it and put it with the dishes to be cleaned.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • There was a build-up of food debris under the shelves in the walk-in cooler. Please ensure that the indicated areas are cleaned.
