- The rice paddle was stored in water that measured 15C. Utensils must not be stored in water at room temperature as this promotes the growth of bacteria. Store utensils in the following manner: - Iced cold water <4C - Hot water >60C - An approved sanitizer solution (100ppm of chlorine or 200ppm of quats). The operator discarded the water and replaced it with iced cold water during the inspection.

- The exterior of various spice jars and the lids for flour and sugar containers were soiled. There was an accumulation of food debris.Ensure the food containers are regularly cleaned for safe handling of food. The operator cleaned the food containers during the inspection.
