      • Corrective Action(s):
      • - Manager stated that she forgot to make it in the morning because it was busy. Inspection took place at 4pm in the afternoon. Ensure all wiping rags are soaked with the sanitizer and they are made fresh in every morning, replenished throughout the day when the solution becomes murky. 200ppm bleach sanitizer was made at the time of inspection.

      • REPEAT VIOLATION: Cooked bubble tea toppings stored in room temperature for more than 2 hours.

      • - Pearls and sago pearls were discarded at the time of inspection. Employee stated that they hold the cooked toppings for 3 hours. Ensure the time limit is set at 2 hours, not 3 hours.

      • - Observed cooked pearl bubble tea toppings stored at room temperature. Staff stated it was prepared at 12pm.
      • Corrective Action(s):
      • - Violation noted at 2:37pm - the pearls have been in ambient temperature for more than 2 hours - do not store potentially hazardous food items in room temperature for more than 2 hours at which point they should be discarded. If they have been cooling after they were cooked, they can be transferred to cooler before 2 hours time limit is reached. Pearls were discarded at the time of inspection. **Start time stamping on each containers of pearls.

      • - Clean the areas noted above.

      • 2. A pot of heated sugar was being cooled on top of the grease trap
      • Corrective Action(s): 1. Provide a stainless steel scoop with a handle to prevent contamination
      • 2. Do not store any food items on top of the grease trap. The grease trap is not a sanitary.

      • Observation (CORRECTED DURING INSPECTION): A standup slide door cooler was relocated. A chest freezer with a stainless cover was placed where the standup slider door cooler was located at the time of initial inspection.
      • Corrective Action(s): Do not relocate or place any equipement unless approved by the Health Department.
      • The operator stated they put a stainless still cover on the chest freezer to create more working space.
      • This is acceptable under the condition: opening of the chest freezer in the morning only. Only the bottles of frozen fruit teas were placed in the chest freezer. Transfer the frozen fruit teas from the chest freezer to the stand up freezer daily in the morning.
