      • Observation (CORRECTED DURING INSPECTION): Chocolate cakes with cream cheese frosting stored at room temperature.
      • Corrective Action(s): Operator moved food item to the cooler during the inspection. Cream cheese frosting is a perishable food and is to be stored at 4C or less to prevent pathogen growth.

      • Observation (CORRECTED DURING INSPECTION): High temperature dishwasher sanitizing cycle measured at 67.3C after multiuple runs.
      • Corrective Action(s): Operator to manually sanitize all dishware/utensils in the 2 compartment sink using a 100-200ppm bleach solution. Test strips provided during the inspection to verify concentration.

      • Observation (CORRECTED DURING INSPECTION): Back of house sanitizer container was noted with 100 PPM QUAT.
      • Corrective Action(s): **Issue corrected at the time of inspection** Sanitizer solution was discarded and remixed. New sanitizer solution was noted with 400 PPM QUAT. Please ensure to change the sanitizer solution every couple hours or more often if noted visibly soiled to ensure it has adequate sanitizer ability for sanitizing food contact surfaces.

      • Observation (CORRECTED DURING INSPECTION): Dried on food soil on the blade of a hand blender. Blender was noted in the cleaned utensil storage shelf.
      • Corrective Action(s): **Issue was corrected at the time of inspection** Hand blender was remove from the storage shelf for cleaning and sanitizing before next use.
      • Check all cleaned utensils and dishwares after they have been washed to ensure that they are completely cleaned before storing away - this avoids contaminating other cleaned utensils that are stored together and prevents using the soiled utensils/ equipment when it is needed again.

      • Observation (CORRECTED DURING INSPECTION): > 500 ppm QUAT detected in the sanitizer container in the front of house.
      • Corrective Action(s): **Issue was corrected during the inspection** Staff diluted the sanitizer solution. 200 ppm QUAT was detected in the solution after the sanitizer was diluted. Always ensure the concentration of the QUAT solution is between 150 - 400 ppm (using Noriquat at the facility) before using on food contact surfaces. When the concentration is too high it may get transferred to food and become a chemical hazard.

      • Observation (CORRECTED DURING INSPECTION): In the customer self-service area - Mike carafe noted with an internal temperature of 6.9C and cream carafe noted with an internal temperature of 5.9C.
      • As per operator, carafes were brought out at 9 AM this morning. Current time of inspection was around 1:15 PM.
      • Corrective Action(s): **Issue corrected at the time of inspection**
      • Operator discarded the milk and cream during the inspection.
      • Over time, carafes lost the ability to hold temperature below 4C, therefore milk and cream kept in these units must be discarded and replaced every 4 hours.
      • Have a system in place where the milk and cream are discarded and changed out after every 4 hours.

      • Observation (CORRECTED DURING INSPECTION): No quat detected in the quat sanitizer spray bottle noted in the front of house during the inspection.
      • Corrective Action(s): **Issue corrected during the inspection**
      • Operator discarded the content of the spray bottle and re-mixed the solution. 150 ppm QUAT detected in the spray bottle (note: Facility is using Noriquat, 150 ppm is an adequate concentration for this sanitizer).
      • Obtain QUAT test strips to allow operator/ food handler to determine if the correct amount of QUAT has been dispensed for use before using.

      • Observation: Noted a display cooler at the front of house not plugged in during the inspection - unit empty.
      • Corrective Action(s): As per operator, they have plans to remove the non-functioning display cooler and to extend their serving counter.
      • Whenever the floor plan is to be changed, operator MUST submit an approval for revise floor plan prior to making any changes at their facility. Changes are only allow once approval has been granted by Fraser Health. Please submit change in floor plan to the district inspector before removing the display cooler.

      • 501 - Operator does not have FOODSAFE Level 1 or Equivalent [s. 10(1)]
      • Observation (CORRECTED DURING INSPECTION): Operator's FOODSAFE level 1 expired in April 2021.

      • Observation (CORRECTED DURING INSPECTION): Soup held in soup warmer was measured to be at 45C. Staff had forgotten to turn on the warmer.
      • Corrective Action(s): Staff stated soup was cooked on stovetop less than 2 hours prior to time of inspection; staff began reheating soup on stovetop at time of inspection. Ensure to reheat soup to boiling temperature (100C), then hold in PREHEATED soup warmer at 60C or hotter.
