- Cleaning cloths in the front service area was stored on the shelf and did not contain sanitizer. Ensure cleaning cloths are stored in a sanitizer bucket to prevent the growth and spread of bacteria on surfaces when cleaning. The operator placed the cleaning cloth in a sanitizer bucket at the time of the inspection.

- The concentration of quats in the dipper well of the front service area measured 150ppm. Quats solution must be maintained at 200ppm to effectively sanitize utensils. Ensure the sanitizer solution is tested and replaced regularly. The operator added more quats to the dipper well and measured 200ppm at the time of the inspection.
