      • In accordance with Section 2.9 of the NS Food Retail and Food Services Code, you must: store all food and food items a minimum of 15 cm (6 in.) off the floor on racks, shelves or pallets; store all food and food items a minimum of 5 cm (2 in.) from the walls. Do not store any boxes directly on the ground next to the walk-in cooler.
    • 23(2)(a) Equipment used to cook, heat-treat, cool, store, display or freeze food must be designed to (a) achieve the required food temperature as rapidly as is necessary to maintain food safety; and
      • Refrigeration unit in the front kitchen requires proper suction to make sure the temperature is always being maintained.

      • Utensils stored in stainless steel cases require cleaning and sanitizing due to soiled containers.

      • Clean and sanitize all areas affected by mice. Mice droppings were found along the floors in the kitchen, on the floor in the walk-in cooler, in the dry storage area and on the floor in the staff washroom.

      • A mechanical dishwasher using a chlorine sanitizer is required to meet the following perameters:100ppm. Dishwasher requires maintenance to ensure proper chemical sanitizing. Manual sanitizing of glassware is required until the dishwasher fixed.
