- Observation: Temperature of wash water to be 120F at the wash water gauge as per dishwasher manufacturer.
- Corrective Action(s): Verify what the water temperature inside of the machine is effective for washing of dishes and utensils. Currently it may not be hot enough (95F measured inside of the machine). In meantime, wash dishes and utensils in sink using hot water (about 119F measured from tap) and detergent.

- Observation: Wall under server counter is worn and there is exposed wood (there is no food preparation in this area). Some flooring tiles in kitchen/dishwash area are becoming pitted and grout is cracked.
- Corrective Action(s): Clean along floor/wall junctions and repair surfaces that are becoming worn so that they are non-absorbent (imprevious to moisture) and can be cleaned.

- Observation (CORRECTED DURING INSPECTION): Small drawer cooler for milk and yogurt storage was recently unplugged. Temperature (air and food) is above 4C/40F. Temperature records show cooler was at 40F earlier today.
- Corrective Action(s): Do not store any potentially hazardous foods (PHFs) in this cooler until it can keep them at 4C/40F or colder. Cooler emptied during inspection. Store all PHFs at 4C or colder.
