    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: During the inspection, the ice machine was found to be unsanitary with mould visible on the evaporator and other components. Public health significance: Consumption of contaminated ice may result in foodborne illness among the consumer. Newly formed ice may transfer mold into the ice bucket or water droplets may introduce mold into the ice bucket.
      • Corrective Action: The operator was asked to wash, rinse, and sanitize the ice machine. The operator should ensure that this process is followed regularly.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: During the inspection, the meat slicer was found in an unsanitary condition with small meat pieces present on the machine. Public health significance: Bacteria could grow on the leftover meat pieces and potentially could contaminate fresh cut meat pieces.
      • Corrective Action: Meat slicer parts should be taken apart and thoroughly washed, rinsed, and sanitized after each shift.

    • 104 - Permit not posted in a conspicuous location [s. 8(7)]
      • Observation: Permit to operate was seen posted inside the kitchen area instead of the restaurant area where everyone could spot it.
      • Corrective Action: Operator to have the permit posted in a conspicuous location where it is easily seen by everyone.
    • 205 - Critical Repeat Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: (CORRECTED DURING INSPECTION) Food products stored in the open top cooler were stored at a temperature more than 4°C which was verified using probe thermometers. The internal temperature of beef patties was noted at 11°C. All potentially hazardous food items must not be stored at temperatures between 4°C and 60°C to prevent growth of foodborne pathogens.
      • Corrective Action: The operator voluntarily discarded the food products (beef patties and diced meat) and was told to only store small portions in the cooler until the refrigerator unit is repaired.
    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: (CORRECTED DURING INSPECTION) Raw bacon was stored right next to the raw mushrooms in the walk-in cooler which has potential for cross-contamination between the meat and produce. Cross -contamination of food could lead to spread of foodborne illnesses.
      • Corrective Action: Operator immediately moved the box of mushrooms away from the raw bacon and stored it in a manner that prevents cross-contamination.
    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Small amount of mice droppings were observed in the store (ice cream) area. Presence of mice droppings indicate pest infestation which could lead to contamination of food products and cause foodborne illnesses.
      • Corrective Action: Operator immediately cleaned and sanitized the area in an appropriate manner. Operator to place a mice snap trap in the store area.
    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: The back door and another door that opens to the outside (close to the washrooms) do not completely close and leave large gaps that could lead to the entry of pests into the food premises. Pests in the food premises can contaminate the food products and lead to spread of foodborne illnesses.
      • Corrective Action: The doors need to have new weather strips in place to completely seal off the gaps and potential pest access points.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Floor tiles were broken in the kitchen area of the the food premises which pose tripping hazard for the employees as well as risk of potential contamination of the food because of the inability to effectively clean and sanitize the floors.
      • Corrective Action: Operator to provide a plan and timeline for the repair of the flooring.
    • 309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
      • Observation: Sanitizer spray bottle stored at the front counter area contained quats sanitizer solution and was not labelled for the contents. This could lead to accidental contact with food and contaminate the food products.
      • Corrective Action: Operator to label all chemicals, cleaners and disinfectans used within thhe food premises.
