    • Critical Improper Cleaning, Sanitizing of Equipment and Utensils
      • Bleach sanitizer in bottle tested 0ppm Chlorine.
      • Operator added additional chlorine. Thank you. Ensure to use 1 tablespoon Bleach per 1L of Water. Ensure there is at least 100ppm Chlorine for sanitizing food contact surfaces.
    • Improper Construction / Maintenance of Establishment
      • Cutting board of the line cooler has dark residue on top.
      • This cutting board needs to be cleaned and sanitized. Use bleach solution to ensure it maintains clean each day and complete a deep clean before making next batch of sandwiches and wraps. Comments Food Handler Hygiene: Hand wash stations are fully supplied with hot and cold running water, liquid soap and paper towels in dispensers. Operators had clean clothing for food preparation. Food Safety: Food in cold holding Coolers are below 4C. Food in cold holding Freezers are below -18C. No hot holding items at the time of inspection. Approved Food Source: food ingredients are from an approved source. Food is stored in covered containers; food storage is organized in coolers to prevent contamination. Maintenance and Sanitation: 2 Compartment Sink is fully supplied with bleach. Dishwasher was not tested during the inspection as it was not turned on and not in use. Operator has minimal dishes to clean/sanitize as all items are single use disposable or in plastic wrap; operator has ability to clean/sanitize in 2 compartment sink. Signage for steps to clean and sanitize are posted. Storage of chemicals is separate and away from food. Condition of equipment and surfaces: food contact surfaces and equipment are in good repair. Pest control: there are no signs of pests at the time of inspection. Administration: sanitation plan available on site and staff appeared to be following the plan. Staff is certified in food safety.
