      • The hot holding trays/pans in the steam table had not been cleaned yet and had some dust/debris. Food had not been prepared yet and the steam table was not up to temperature.The operator informed the inspector that they would have the trays cleaned out before the steam table was put in use.

      • The paper towel dispenser was empty at the beginning of the inspection. This was brought to the attention of the operator, who loaded the roll of paper towel onto the dispenser. Please ensure handwashing supplies are readily available so that handwashing can be carried out easily and effectively.
