- Observation(s): Gravy was not being hot held >60°C. Gravy is a potentially hazardous food. Employee recognized this and microwaved small portion before serving to customer.
- F1.2A Potentially hazardous foods must be stored or displayed at a temperature of 60 °C (140 °F) or hotter.
- F1.7 Are foods protected from contamination?
- Observation(s): Frozen pies were observed without any covering / lid on top of the inside of the freezer. This is a contamination concern from physical contamination from packaging, or cross contamination from other foods, etc.
- F1.7A The operator must ensure that all food on the premises is protected from contamination.
- F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
- Observation(s): Sanitizer solution tested and measured >300ppm. This is too strong, please rinse surfaces with water after sanitizing if using this concentration. Sani should be 100-200ppm if using bleach.
- F2.3D Sanitizer solution must be available and kept at the correct levels for adequate sanitizing action.
- F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
- Observation(s): Please label any bottle containing chemical to identify what it is. (bleach bottles).
