      • Observation: Flooring on the cookline has now been completely worn away to bare concrete with uneven sections. This bare concrete has now absorbed the grease and food debris that has been dropped on it.
      • Tiles in the back kitchen/prep space are cracked and extremely worn.
      • Corrective Action(s): This bare concrete floor on the cookline is no longer an acceptable flooring. Manager informed EHO in Dec 2024 that flooring would be replaced throughout and that has not happened. Flooring throughout restaurant MUST be replaced so it meets the Food Premises Regulation requirements of being smooth, impervious and easily cleanable. By Oct 1/25

      • Observation: Inserts of foods on prep cooler did not fit properly in their slots and foods were being maintained at 5-8 deg. C
      • Corrective Action(s): Ensure all potentially hazardous foods are cold held at 4 degrees C or colder. Operator replaced inserts and rearranged them so that they would fit properly. Some inserts below were also moved to another cooler to allow for better cold air circulation. Foods below were being maintained at 2 degrees C. Monitor and track foods on top of prep cooler. Discard after 4 hours if not able to be maintained at 4 deg C. Call repairman if required.

      • Observation: Premises has a build up of debris noted under preparation tables, on shelves, on top of dishwasher, under drawer coolers, on walls and under three compartment sink. Grease spillage noted around deep fryer.
      • Corrective Action(s): Thoroughly clean and maintain all floors, walls in both the front and back area, and all shelves. Remove cardboard from shelves.

More other food items to a working cooler. Defrost / fix / adjust cooler so it is able to maintain cold potentially hazardous food items at or below 4C / 40F.
