      • Internal sanitizing temperature of mechanical dishwasher measured to be 65°C or plate level.
      • Repair dishwasher to ensure water hitting plate surface is a minimum of 71°C. Test strip used passed temperature test. Corrective action on temporary basis is to use quats sanitizer for all dishes after running through the dishwasher. (200 ppm quats) Comments Follow-up inspection conducted today.
