      • Observation: Scoop left in food product (Pancake mix) for ongoing use. (Public Health Significance) Scoop storage in the food exposes it to bare hand contact and potential contamination which may lead to a foodborne illness.
      • Corrective Action: Scoops should be store in a sanitary manner and clean and sanitize them regularly.

      • Observation: Containers of food items in the walk-in cooler were stored on the floor, food items were also left uncovered in the walk-in cooler. Food items in the walk-in freezer were also stored uncovered on the floor. (Public Health Significance) - Storing uncovered food items on floor in the walk-in cooler makes it easily accessible to pests that may carry illness causing pathogens, these pests can contaminate the food items and may cause food-borne illness.Uncovered food items can also be exposed to physical contaminants such as dust and grime which may contaminate the food and cause advserse health effects.
      • Corrective Action: Operator to ensure that all food items are stored 15 cms off the floor and are covered.
    • 302 - Critical Repeat Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Food handling equipment (can opener and meat slicer) had build-up of food residuals and is not adequately washed and sanitized. Meat slicer used for raw vegetables and processed meat was not cleaned and sanitized between uses. (Public Health Significance) - Food residuals left on inadequately cleaned can opener and meat slicer are exposed to temperature danger zone (4°C - 60° C) which may lead to growth of disease causing pathogens and toxins, such food handling equipment may cross-contaminate other food products when reused and can cause food-borne illness.
      • Corrective Action: Operator to ensure that the can opener and meat slicer are adequately and frequently washed and sanitized between uses.

      • Observation: Significant number of containers of vegetables, sauces, and cooked meat were stored on the floor of walk-in cooler and walk-in refrigerator. Containers of food items were also observed stored on the floor of the back area of kitchen (Public Health Significance) - Storing food items and containers containing food items on the floor can be easily accessed by pests that may carry disease causing pathogens, pests may contaminate the food items which upon consumption can cause food-borne illness.
      • Corrective Action: All food items to be stored at least 15 cms off the floor and 5 cms off the wall
    • 301 - Critical Repeat Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: Several utensils were stored in an unsanitary manner in containers and trays containing food debris and grime. (Public Health Significance)- Storing food handling equipment in an unsanitary manner can cause contamination of food items when used, such contaminated food items if consumed can cause food-borne illness.
      • Corrective Action: Ensure that all food-handling equipment and utensils are stored in containers and storage units that are clean and sanitary.
    • 302 - Critical Repeat Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Food handling equipment (can opener) had build-up of food residuals and is not adequately washed and sanitized. (Public Health Significance) - Food residuals left on inadequately cleaned can opener are exposed to room temperature which may lead to growth of disease causing pathogens and toxins, such food handling equipment (can opener) may cross-contaminate other food products when reused.
      • Corrective Action: Ensure that food handling equipment such as a can opener is frequently and adequately cleaned and sanitised
    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: Grate of the air vent below the kitchen counter was not fixed forming a large opening. (Public Health Significance) - Air vent penings in the food premises can cause entry of pests that may carry illness causing organsims. These pests may contaminate the food items which upon consumption can cause food-borne illness.
      • Corrective Action: Ensure that the grate for the air vent in the kitchen is replaced/fixed such that there is no opening causing entry of pests.
    • 306 - Repeat Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Significant accumulation of food-debris, grease and grime was observed in the food premises, especilly near the area by the stove, storage units, and behind food handling equipment. (Public Health Significance) - Accumulation of significant amounts of grease grime, and food debris in food handling and food storage areas can cause physical contamination of food, such contaminated food items if consumed can cause food-borne illness.
      • Corrective Action: Ensure that the food premises is thoroughly deep-cleaned, especially behind and under the harder to reach areas and maintained in a sanitary condition.
    • 307 - Repeat Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Food storage shelving units in the walk-in freezer are made of raw wood finish and not sufficiently durable. (Public Health significance) Materials like raw wood may absorb juices and moisture which can facilitate the harbourage of disease causing pathogens that can contaminate food items, such contaminated food items when consumed can cause food-borne illness.
      • Corrective Action: Ensure that food storage surfaces in the walk-in cooler are repaired/resurfaced such that they are smooth, non-absorbent and easy to clean.

      • Observation: Package of raw meat was stored on the floor of the walk-in freezer. Significant number of containers of vegetables, sauces, and cooked meat were stored on the floor of walk-in cooler and walk-in refrigerator. (Public Health Significance) - Storing food items and containers containing food items on the floor can be easily accessed by pests that may carry disease causing pathogens, pests may contaminate the food items which upon consumption can cause food-borne illness.
      • Corrective Action: All food items to be stored at least 15 cms off the floor and 5 cms off the walls.

      • Observation: Food items such as vegetables were stored (exposed) below uncovered meat products such as smoked ham, and sausages. Several food items in the fridge were left uncovered in trays. Box of strawberries were stored in a container of mashed potatoes (Public Health Significance) - Storing high risk potentially hazardous food items uncovered such as smoked ham and sausages above vegetables can cause potential cross-contamintion of the vegetables by dripping of juices, such contaminated food items if consumed can cause food-borne illness.
      • Corrective Action: All high risk potentially hazardous food items (meat products) should be stored at a lower shelf than low-risk potentially hazardous food items. Food items should be adequately covered to prevent contamination.

      • Observation: Food handling equipment such as scoops and spoons were observed to be stored in a cup of soiled water. Several utensils were stored in an unsanitary manner in containers and trays containing food debris and grime. (Public Health Significance)- Storing food handling equipment in an unsanitary manner can cause contamination of food items when used, such contaminated food items if consumed can cause food-borne illness.
      • Corrective Action: Ensure that all food-handling equipment and utensils are stored in containers and storage units that are clean and sanitary.

      • Corrective Action: Replace non food safe containers with food safe containers or containers that previously contained food

      • Observation: Various implements used a scoops are left in product for ongoing use including ingredient bins, ice machines, ready to eat product. (Public Health Significance) Improper scoops and scoop storage exposes items to bare hand contact and potential contamination.
      • Corrective Action: Store scoops so that foods are not exposed to the handles or bare hand contact. Store food scoops in a sanitary manner and clean and sanitize them regularly.

      • Observation: Foods were left uncovered and open to contamination. (Public Health significance) - Contamination of food from contact with objects, people, pests or chemicals can cause serious illness.
      • Corrective Action: Cover or otherwise protect all foods from airborne contaminants, drips from raw foods, and contact with objects and staff
    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: Back door and back window in the kitchen open high risk for pests coming in.
      • Corrective Action: Have a screens on the door and window to prevent pest entrance if keeping the door and window open
