    • 302 - Critical Repeat Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: (CORRECTED DURING INSPECTION) No sanitizing solution (QUATs) was observed in the bucket kept in the kitchen at the time of inspection—the bucket was empty. (Public Health Significance): The lack of sanitizer means surfaces might not be effectively sanitized, potentially leading to bacterial contamination of food and food contact surfaces. Sanitizing solutions must be prepared at an effective concentration to destroy bacteria on food-contact surfaces.
      • Corrective Action: The employee promptly filled the bucket with sanitizing solution that was verified at the correct concentration of 200 ppm. Sanitizing solutions must be changed as needed to consistently maintain an effective concentration of 200 ppm QUATs. The operator must ensure that staff regularly verify the concentration of sanitizing solutions using appropriate test strips to maintain effective sanitation throughout facility operation.

    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: The interior of the ice tube dispenser (with the ice machine on top), connected to the pop machine, was observed to be filled with visible dirt, possibly due to backsplash from the pop machine. In addition, the ice machine could not be fully inspected at the time of the visit, as the operator stated that he did not have the appropriate tools or equipment to open it. (Public Health Significance): The presence of dirt in ice dispensing equipment can contaminate consumable ice, posing a public health concern.
      • Corrective Action: The ice machine must be checked, and the tube dispensing ice and beverages (pop) must be thoroughly cleaned and routinely inspected for any signs of dirt or mold contamination. The ice machine will be inspected during the follow-up visit; however, the operator must always have a method or means available to open the ice machine upon request by the Environmental Health Officer.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: The sanitizer concentration (Quats) in the solution buckets used at the facility for cleaning food contact surfaces was not at the required level at the time of inspection. The Quats solution was measured at 100 ppm, which is below the recommended concentration of 200 ppm. (Public Health Significance) Sanitizing solutions must be strong enough to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface.
      • Corrective Action: Change sanitizing solutions as required to always maintain an effective concentration (200 ppm QUATs). Dirty water must be replaced frequently with clean water and fresh sanitizing solution, and the concentration must be verified using test strips.
