      • No thermometers were available for the two line coolers in the kitchen.Staff corrected the violation by placing new thermometers in the coolers. Ensure to have thermometers in the coolers and freezers to properly monitor and maintain the temperatures.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The facility uses Lactic acid for sanitizing the food contact surfaces and there were no test strips available to test the concentration of the sanitizer.Since the concentration of the product cannot be determined, staff were instructed to bleach sanitizer which already has test strips available onsite.Ensure to always provide test strips to monitor the concentration of the sanitizer.

      • Scoop handles in contact with food (flour) in the bulk bins. Ensure the scoop handles are stored away from the bulk food items to prevent food contamination.Operated removed/replaced them during the inspection.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The kitchen exhaust/ventilation system had heavy accumulation of grease/dust. The operator stated that it is scheduled for professional cleaning later this month.Please ensure to clean between the filters and the dust above the canopy/hood.
