- Observation: Walk-in cooler was measured at 5-6C at time of inspection. Doughs and toppings were being prepared and taken into the walk-in cooler at the same time. The walk-in cooler also appears to be fluctuating according to temperature records.
- Corrective Action(s): Please have technician adjust the cooler so it is maintained at 4C or colder. Place an accurate display thermometer inside the walk-in cooler. Keep a copy of the service report for review.
