- Observation (CORRECTED DURING INSPECTION): Soaked noodles (20 degC), pizza (18 degC), meat sauce (48 degC) were stored at room temperature. Meat sauce was reheated then stove was turned off. Staff mentioned that the heat would be turned on again to reheat the sauce prior to service. Pizzas were from the cooler, but were being stored at room temperature then reheated on order prior to service.
- Corrective Action(s): As discussed, these practices are unacceptable. Cooked sauce and pizzas are to be kept hot (above 60 degC) or cooled down and stored in the cooler at all times. They cannot be stored out at room temperature for an extended period of time. Discussed time stamps with staff for 2hr/4hr holding, but she preferred keeping the pizzas and the sauce in the cooler and reheating on order.

- Observation (CORRECTED DURING INSPECTION): There was no bleach sanitizer available at the time of the inspection. Staff was spotted rushing to make sanitizer when the inspector arrived. The sanitizer bucket is kept inside the dishwashing sinks because the staff deems the bleach solution to be "chemical" and keeps it away from food handling areas. When asked about how the solution is used, staff said they "keep it in the sink because its chemical"
- Corrective Action(s): Staff is aware of the correct ratios to make 200 ppm chlorine residual sanitizer. However, they are not using the sanitizer to sanitize food contact surfaces. 200 ppm chlorine residual sanitizer solution is safe for food contact surfaces. Ensure all food handling areas are wiped down every 2 hours to prevent the growth of harmful bacteria that can get people sick. It is recommended that Food Safe level 1 notes be reviewed by all staff to understand the purpose and correct use of bleach sanitizers.
