- Observation: TO make sure all dust, debris and unknown bacterial residue from the walk-in cooler fans to prevent cross-contamination of airborne particles contacting food products.
- Corrective Action: Operator to remove and thorough clean the walking cooler fans.

- Observation: All food products within the facility are at least 15 cm (6 inches) from the ground to prevent direct contamination with people, pests and cleaning products, and permit the thorough cleaning of floor surfaces.
- Corrective Action: Make sure all the food products are kept at lest 15cm above the ground level

- Observation: Observed numerous scoops left in bulk dried products for ongoing use such as, flour, cornmeal, sesame seeds, bulk flour ingredient bins, (Public Health Significance) Improper scoops and scoop storage exposes items to bare hand contact and potential contamination.
- Corrective Action: Store scoops so that foods are not exposed to the handles or bare hand contact. Store food scoops in a sanitary manner and clean and sanitize them regularly.

- Observation: Foods were left uncovered and open to contamination. (Public Health significance) - Contamination of food from contact with objects, people, pests or chemicals can cause serious illness.
- Corrective Action: Cover or otherwise protect all foods from airborne contaminants, drips from raw foods, and contact with objects and staff

- Observation: Observed multiple racks and baking equipment used for food preparation and food product cooling, storage and transfer within the facility to have a build up of old food debris, dust and grime at time of inspection. Accumulated food debris, grime, and dirt can permit the cross-contamination of food products resulting in potential food borne illness and permit a food source for pests to enter and harbour within the food premises.
- Corrective Action: Operator to remove old food debris, dust and grime from metal racks and baking equipment / utensils within the facility, then thoroughly clean and sanitize the surfaces to reduce the risk of cross-contamination which can result in potential food borne illness.
- 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
- Observation: Observed old grease and old food debris from the industrial fryer and the fryer hood ventilation to permit the adequate removal of frying vapours. Accumulated grease can pose a potential fire hazard and must be cleaned and maintained in a sanitary condition.
- Corrective Action: Environmental health officer recommends utilizing a professional ventilation cleaning service to adequately remove accumulated grease from the equipment and ventilation surfaces.

- Observation: Evidence of mice; droppings were noted in the facility. (Public Health Significance) Observed rodent feces on the floor behind the industrial fryer and perpendicular racks for utensil storage, on the floors next to the wall within the flour storage area and within the chemical storage cabinet bottom shelf within the employee washroom. Rodents and other pests may cross contaminate foods and surfaces or contaminate human food with feces and urine, carry parasites and other diseases.
- Corrective Action: Remove any pest attractants such as food and water, eliminate access to the building and routes they use inside. Trap and remove the pests. The use of a professional pest control operator is recommended. Clean and sanitize area where droppings are located and monitor situation.

- Observation: Cleaning chemicals are stored with food items. (Public Health significance) - Accidental contact, fumes and spills can contaminate foods.

- Observation: (CORRECTED DURING INSPECTION) Observed various implements used a scoops left in flour, chocolate baking powder and icing sugar food products at time of inspection. (Public Health Significance) Improper scoops and scoop storage exposes items to bare hand contact and potential contamination. Observed operator remove scoops from ingredient bins and place implements in a container to be washed, sanitized and dried at time of inspection.
- Corrective Action: Operator to store scoops so that foods are not exposed to the handles or bare hand contact. Store food scoops in a sanitary manner and clean and sanitize them regularly.

- Observation: Observed tubular florescent lights without plastic safety casings over the packaging food preparation area. Broken glass from the lighting source without safety covers / casings permit a direct physical hazard of glass contamination into food products.
- Corrective Action: Operator to purchase and install safety coverings / casings on tubular florescent lights within the packaging area and / or install new light fixtures equipped with safety coverings and / or casings to reduce the potential risk of glass contaminating food products.

- Observation: (CORRECTED DURING INSPECTION) A valid permit was not posted in a conspicuous location.
- Corrective Action: Staff immediately put the valid permit in a conspicuous location.

- Observation: Bread stored in the walk-in freezer were placed on the ground. (Public Health significance) – food items not stored 15cm (6 inches) off the floor are subjected to contamination from sewage, waste, pest or chemicals that can cause illnesses.
- Corrective Action: All food items or food contacting equipment should be stored at least 15cm (6 in.) off the ground.

- Observation: Food debris remained in a meat slicer. (Public Health significance) - food debris could promote the growth of bacteria and subsequently contaminate foods, potentially causing food-borne illnesses.
- Corrective Action: Operator to clean and sanitize the meat slicer thoroughly, ensuring no food debris is remained.

- Observation: Back door of the premises was not kept tightly closed, leaving gaps large enough to allow pest entry. Food debris found in the canvas covered oven, potentially attracting pest harbourage. (Public Health significance) – premises should prevent the entry and harbourage of pest, which could result in food contamination.
- Corrective Action: Operator to seal the gap between the door and the door frame. Operator to clean the food debris in the oven.
