    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Trail mix was prepared and left in open containers on a rolling cart with a dust cover on it. It was stored in the dry storage room for at least 2 days. This is not protected from pests. Prepare food as needed or store in a manner that prevents pest contamination. Check all products for signs of pest contamination and discard if any signs of pests are found.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Mice have been noted in the facility. Ongoing pest control efforts have been increased. Ensure all areas are checked for signs of mice daily and possible entry routes. Notify maintenance when signs are noted in a timely manner. All food contact surfaces must be cleaned and sanitized before starting any food preparation daily.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Some grout and tiles are damaged near the bombers. Repair the grout and replace any cracked tiles.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • One freezer has been shut down and work is underway to have it repaired. Only one freezer is available resulting in cramped storage space. Ensure this repair is completed as soon as possible.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Cleaning schedules are not maintained. Current paperwork should be reviewed and updated. Sanitation records must be maintained consistently.This is a repeat violation.

      • Sanitizer log shows a concentration of 300ppm with no corrective action. Quaternary ammonium solutions are not considered food safe above 200ppm. Ensure solutions are diluted if needed.

      • Some tiles under the bombers are chipped and cracked. Repair and replace the tiles.The utensil cabinet is chipped and bare wood is exposed. Repair and repaint the cabinet.The paint on the wall behind the dishwasher is peeling. Repair and repaint this area.

      • The seals on the doors of both walk-in freezers at the back were in disrepair.Please ensure the seals on both doors are replaced.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • At the time of the inspection:1) Sanitation records were not being completed.2) There was a juice spill in the white walk-in cooler.3) There was a debris build-up between and around the frying equipment.Please ensure:1) All sanitation records are maintained and completed consistently.2) The juice spill in the white walk-in cooler is cleaned.3) The debris build-up around the frying equipment is adequately cleaned.

      • Noted repairs are planned for the end of Jan 2024. Extension granted. The ceiling in the dishpit, bake shop and kitchen area is peeling. Paint chips may fall into food. Repair the ceiling. Wall in the wash bay has holes and chipped concrete. Repair this to be smooth, nonporous and easily cleanable. The door trim to the storage area near the orange cooler is in disrepair. Repair the trim.

      • There is no tag on the fire suppression system indicating when it was last serviced. Fire suppression systems in commercial food establishments must be inspected every 6 months. Please provide proof of the most recent inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • One sticker indicates that the ventilation unit is overdue for servicing and a second sticker does not have any indication of date serviced. Provide proof that the ventilation unit has been professionally cleaned within the last 12 months or have the unit serviced as soon as possible.This is a repeat violation.
