- Observation (CORRECTED DURING INSPECTION): pizza slices at room temperature are NOT being time tracked -no time sheets observed only that operator "assures" proper holding time of 90 minutes after cooking then transferred to the fridge is being followed.
- Corrective Action(s): For any potentially hazardous foods kept at room temperature MUST be time tracked either by the time sheets as per your Food Safety Plan or placing display markers for each flavour indicating time out cooking or when to discard.
- Operator indicates markers (stands) will be used for each tray -operator to confirm by the end of the week.
