      • Facility does not have chlorine test strips for bleach sanitizer. - Obtain test strips and ensure concentration of sanitizer is tested for and maintained at all times.

      • No sanitizer solution was initially prepared for use in the kitchen. No bulk supply of bleach available at the facility.- Operator was able get bulk supply of bleach. 100 ppm chlorine sanitizer was prepared during inspection. - As discussed, ensure that a sanitizer is prepared for use at all times for each food handling area.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Food containers were stored on the floor in the dry storage area and walk-in cooler. - Operator moved containers off the floor during inspection.- Ensure that all food products are stored in a safe and sanitary manner at least 12 cm (6 in.) off the ground.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Operator was not able to demonstrate proper use of the 3-compartment sink for dishwashing purposes. No bleach supply available at the facility. Proper sanitizing step was not followed, as required.- Operator was informed on how to properly use the sink for sanitization.- Operator was able to obtain bleach and prepare sanitizer solution for dishwashing. Tested at 100 ppm.- As discussed, ensure to fully submerge all dishes, utensils, and equipment in a 100-ppm chlorine solution to sanitize.

      • Facility does not have test strips for chlorine sanitizer. - Provide test strips and ensure concentration of sanitizer is tested for and maintained at all times.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Handwashing stations in the back kitchen and near pizza oven were in in disrepair with no supply of hot water. Hand sink at kitchen entrance had supply of hot water. - Make sure the kitchen handwash sinks are fully functional and have hot water access.- Ensure all hand wash sinks are fully stocked at all times with soap, paper towels, hot and cold water supply.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • No previous pest control records were provided at the time of the inspection.- Ensure monthly pest control records are being maintained.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Food handling permit was not displayed at the facility.- Please ensure a valid food permit is displayed at the facility where it can be easily seen.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Dough mixer was not properly cleaned, and food debris was noted on the machine.- Operator detached and placed unclean machine parts for dishwashing.- Please ensure the mixer is cleaned more thoroughly and sanitized after use.
