- 19(2)(a) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator:
(a) a supply of potable hot and cold water at adequate pressure and volume with the appropriate facilities to store and distribute the water and to control the water temperature;
- Provide the most recent bacteriological water sampling results to the Public Health Officer.
- 29(3) A food establishment must provide facilities and equipment to implement the maintenance, cleaning and sanitation program and must identify in their program the cleaning and sanitizing agents used in the food establishment, including their concentration and uses.
- The facility must be equipped with food surface sanitizer for proper sanitizing procedures on food surfaces. All food surfaces must be cleaned and sanitized regularly. All sanitizer bottles must be labelled properly.
- 34 An operator must ensure that a food establishment is operated so that all food and food ingredients are processed, manufactured, handled, prepared, packaged, served, sold, offered for sale or distribution free of charge, dispensed, displayed and stored in a manner that prevents contamination and adulteration.
- The ice cream scoop observed stored in a container filled with water which could be a source for contaminating the scoop after multiple uses. The scoop must be stored in a manner that prevent contamination such as; (i) Storing the scoop under refrigeration/freezer temperatures (4 degrees Celsius or below/-18 degrees Celsius or below) (ii) Inside a dipper well (iii) In a container placed inside a hot holding equipment maintain at 60 degrees Celsius or above (iv) Sanitize the scoop after every use and place it inside a clean container. Wash and sanitize the scoop every 4 hours
