- Observation: Lights in dishwashing area do not have covers. Public Health significance - Glass can shatter and contaminate kitchen and/or dishwashing area.
- Corrective Action: Install covers on lights, or replace the light bulbs with shatter-proof bulbs.
- 304 - Repeat Premises not free of pests [s. 26(a)]
- Observation: Evidence of mice; droppings were noted downstairs in the facility. Operator has mice traps set up in a few areas in the kitchen, as well as surrounding areas. Public Health Significance - Rodents and other pests may cross contaminate foods and surfaces or contaminate human food with feces and urine, carry parasites and other diseases.
- Corrective Action: Remove any pest attractants such as food and water, eliminate access to the building and routes they use inside. Trap and remove the pests. Clean and sanitize area where droppings are located and monitor situation. Dishware and utensils will need to be stored in a manner that prevents possible contamination by pests.
- 305 - Repeat Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
- Observation: One of the doors is difficult to close, and is not sealed properly by the floor which may allow access to mice. Significant amount of clutter & items not required operation of food premise and ski facility downstairs, as well as wood by the wood stove, that can provide areas of harbourage for mice.
- Corrective Action: Remove all items not required for operation of food facility and ski operations that can provide areas of harbourage for mice. Seal all areas that may provide entrance of pests into facility. Recommend placing traps by wood to determine if there is pest activity in that area.
- 314 - Operator has not provided acceptable written sanitation procedures [s. 24]
- Observation: Operator was not able to provide a written Sanitation plan at the time of the inspection.
- Corrective Action: Prepare a Sanitation plan using provided resources and submit to Northern Health for review and approval.

- 104 - Permit not posted in a conspicuous location [s. 8(7)]
- Observation: Food facility did not have a permit available at the time of the inspection. Northern Health's records indicate that the facility also owes $104.17 for their Permit to Operate for the fiscal year of 2024.
- Corrective Action: Apply to Northern Health to recieve a new Permit, or find and place your current permit in a conspicuous location. Ensure that your permit fees are paid in a timely manner.
- 205 - Critical Repeat Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
- Observation: Potentially hazardous cold foods are stored at above 4°C. Observed processed potatoes being stored at ambient temperatures, and were measured between 7.7°C to 8.4°C. Public Health significance - All potentially hazardous foods must be stored at below 4°C or above 60°C - out of the danger zone to prevent bacterial growth and possibly food borne illness.
- Corrective Action: Move potentially hazardous cold foods to working refrigeration units that maintain a temperature of 4°C or less, monitor and adjust the temperatures or have serviced, as required. Discard of any potentially hazardous cold foods that has been stored above 4°C for more than 2 hours.
- 209 - Repeat Food not protected from contamination [s. 12(a)]
- Observation: Some food products were left uncovered and open to contamination (e.g., rice crackers package left open). Some food products were stored on the ground (e.g., processed and unprocessed potatoes containers). Mice droppings were observed on, or nearby, several utensils and dishware (e.g., on top of a mug). Lights in kitchen do not have covers. Public Health significance - Contamination of food from contact with objects, people, pests or chemicals can cause serious illness. Glass can shatter and contaminate food products.
- Corrective Action: Cover or otherwise protect all foods from airborne contaminants, drips from raw foods, and contact with objects and staff. All food products must be stored at least 15 cm off the floor. Clean and sanitize all surfaces, utensils, and dishware that has been, or may have been, contaminated by mice or their urine and droppings.
- 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
- Observation: Food residue was observed on the meat slicer. Improperly cleaned and sanitized meat slicers have been linked to Listeria outbreaks.
- Corrective Action: Ensure that all equipment, utensils, and food contact surfaces are cleaned & sanitized regularly so that they are maintained in a sanitary condition. Cleaning frequency and procedures for the meat slicer must be included in your up-to-date Food Safety plan provided to Northern Health for review.

- Observation: Evidence of mice; droppings were noted throughout the facility, including on top of mugs and in the cupboards where utensils are stored. Public Health Significance - Rodents and other pests may cross contaminate foods and surfaces or contaminate human food with feces and urine, carry parasites and other diseases.
- Corrective Action: Remove any pest attractants such as food and water, eliminate access to the building and routes they use inside. Trap and remove the pests. The use of a professional pest control operator is recommended. Clean and sanitize area where droppings are located and monitor situation.

- 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
- Observation: Racks in kitchen cooler are rusted, with chipped paint; some open food products, such as romaine lettuce and sausages, were also stored below these racks that may become physically contaminated with paint or rust. These surfaces also cannot be properly cleaned and sanitized.
- Corrective Action: Replace or refinish any surfaces that are not easily cleanable. All surfaces within the food preparation area must be smooth, impervious to moisture, and easy to clean.
- 309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
- Observation: Spray bottles in the kitchen that contain sanitizer are not labelled with the contents inside (e.g., QUATs sanitizer). Public Health significance - Staff may accidentally use the wrong chemicals for cleaning or sanitizing if bottles are not properly labelled.
- Corrective Action: All chemical containers need to be accurately labelled in the food service establishement.

- Observation: Processed potatoes were stored outside of cooler during the inspection, and were measured at 10°C. Public Health significance - Processed vegetables must be stored below 4°C or above 60°C - out of the danger zone to prevent bacterial and fungal growth as well as production of heat-stable toxins.
- Corrective Action: Move potentially hazardous cold foods to working refrigeration units that maintain a temperature of 4°C or less, monitor and adjust the temperatures or have serviced, as required.

- Observation: Light fixtures within the food preparation area did not have covers. Cleaning chemicals were stored above dry and canned goods. Public Health significance - Contamination of food with glass or undiluted cleaning chemicals can cause serious injury.
- Corrective Action: Shatterproof lightbulbs, light covers, or light tube covers should be installed. Chemicals should be stored below, or separately from food and utensils.

- Observation: Evidence of mice; droppings were noted in the facility. Public Health Significance - Rodents and other pests may cross contaminate foods and surfaces or contaminate human food with feces and urine, carry parasites and other diseases.
- Corrective Action: Remove any pest attractants such as food and water, eliminate access to the building and routes they use inside. Trap and remove the pests. The use of a professional pest control operator is recommended. Clean and sanitize area where droppings are located and monitor situation. Hands must be washed with warm soap and water after coming into contact with mice droppings.
