- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Yes (corrected during inspection) - the food prep refrigeration unit in the main kitchen was 'switched off' and under repair at time of inspection, with the technician repairing the compressor motor fan, acquiring parts, etc. The ambient air temperature and stainless steel inserts were still cold, but the refrigeration unit was non-functional for an undetermined length of time.As there was no indication of the time required for completion of repairs, the operator was advised to remove all perishable food products from the food prep refrigeration unit and into the functional walk-in cooler (at 4 degrees Celsius, or lower). The operator was advised to ensure removal of perishable food products at all times when repairs or maintenance is being undertaken and a refrigeration unit has been 'switched off' and not operational (even if only expected to be for a short time period, as repairs can be lengthy and unexpected in duration). The operator was advised to keep the food prep refrigeration unit 'empty' and not used for food storage until verified that the internal air temperature can be maintained at 4 degrees Celsius, or lower.
