    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The bleach was measured less than 100ppm. A new solution was prepared and tested at 100ppm.-Ensure that the bleach is maintained at 100 ppm.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • A small air-drying plastic mat was observed in the facility for the air drying of utensils.-Ensure that adequate size air drying racks/shelves are provided for air drying of utensils/equipment.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No chlorine test strips were present at the time of inspection.The operator mentioned that they had already ordered the test strips, and they should be delivered that evening.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Raw wood shelves were used to store dry foods.-Ensure that the shelves are smooth and can be easily cleaned and sanitized.
