- Observation: Mechanical high temperature dishwasher was not able to reach the correct sanitizing temperature fof 71 degree celcius at the plate surface at the time of inspection even after running 3 cycles. (Public health significance) - High temperature dishwasher should be reach the sanitizing temperature of 71 degree celcuis at the plate surface in order to effectively sanitize food contact surfaces. Indequately sanitized food contact surfaces can cause contamination of food items and potentially food-borne illness.
- Corrective Action: Operator to ensure that the dishwasher is services such that it reaches the appropriate sanitizing temperature of atleast 71 degree celcius OR dispenses a food grade sanitizer at the correct concentration.
