      • Observation (CORRECTED DURING INSPECTION): Vegetables and raw chicken stored in top inserts of the kitchen prep coolers had temperatures ranging in between 14-20'C. When probed, raw chicken had the internal temperature of 7.7'C. Both units were under the defrosting cycle at the time of the inspection. Temperature records checked.
      • Corrective Action(s): Ensure to monitor the temperatures after the defrosting cycle is complete. As advised at this time, adjust the temperatures of the cooler to 1-2'C below the required temperature of 4'C to better maintain the temperature of top inserts throughout the day.

      • 2) Drawer coolers that are below the griddle have air temperatures above 10C (right side was 14.5C, left side was 12.1C). Potentially hazardous foods stored inside these drawers had internal temperatures that measured above 4C.
      • Corrective Action(s): 1) The handsink must be serviced tomorrow and fully functioning. Follow up inspection will take place on October 28 to verify. Until then, handwashing must take place at the handsink by the cook line.
      • 2) Do not use these coolers to store potentially hazardous foods. Recommended to staff to use these coolers as little as possible as the surrounding cooking equipment significantly affect the air temperature. Service the cooler to ensure it can maintain 4C or colder at all times, or do not use at all.
