      • Observation (CORRECTED DURING INSPECTION): Single use bamboo skewers were being washed.
      • Corrective Action(s): DO NOT wash equipment or utensils that are single use. Bamboo skewers are NOT meant to be washed and/or reused.

      • Observation (CORRECTED DURING INSPECTION): Bleach solution that was prepared for the day measured >200ppm chlorine, solution also appeared soiled and cloudy.
      • Corrective Action(s): Staff remade solution to 100-200ppm chlorine. Test strips are available on site. Use test strips to verify the concentration of bleach solution at the start of each day.

      • Observation (CORRECTED DURING INSPECTION): Food items stored directly on shelves inside freezers without protection from contamitation.
      • > Beef tongues were stored in the standup freezer without cover
      • > Random assortments of frozen meats were stored in the mini freezer directly on the shelves
      • Corrective Action(s): Discarded the random assortment of meats. Beef tongues were covered immediately.
      • THIS IS A REPEAT VIOLATION. Previously noted on routine inspections dated June 6, 2022 and February 6, 2023.
      • Continued violations will result in immediate enforcement action such as correction order or ticketing.

      • Observation: Cleaning is required in the following areas:
      • > Under the dishwasher - food debris and grime in hard to reach areas
      • > Under the prep table by the serving window - rodent droppings

      • Corrective Action(s): Clean and sanitize the facility as per your sanitation plan.
      • All visible areas must be cleaned DAILY. Hard to reach areas (corners under equipment, behind equipment, etc.) must be cleaned at least every 2 weeks.

      • Observation (CORRECTED DURING INSPECTION): Missing surface sanitizer in the main kitchen. The manager prepared new sanitizer at 100ppm chlorine bleach concentration.
      • Corrective Action(s): Surface sanitizer must be readily available at all times to properly sanitize food contact surfaces.

      • Observation: The ventilation hood/exhaust system has not been professional cleaned and due to service, as per service date. The manager stated that cleaning has been scheduled for Monday, July 17, 2023.
      • Corrective Action(s): Submit a copy of the invoice/service date stamp once the equipment has been professionally cleaned.

      • Observation: Low temperature dishwasher has 0ppm detectable chlorine sanitizer residual. Unknown when the last time the dishwasher was checked for sanitizer residual. No daily log sheets available

      • Observation: AGAIN observed foods stored directly on the fridge/freezer shelves without protection such as food grade wrap, food containers, original packaging: raw meats, cabbages
      • NOTE: this was observed June 6, 2022 routine inspection -Correction Order issued.
      • Corrective Action(s): Fridge/freezer shelves are not regularly cleaned and sanitized.

      • Observation: An enormous wok in use and stored under the cooking line along with another pot with utensils.
      • Goods are STILL being stored on the floor in the dry storage room -unable to monitor for pests. No additional multi-level shelves have been added as indicated in the June 6, 2022 routine inspection
      • Corrective Action(s): The enormous wok does not fit the wash sinks -remove from the premises. All dishware must fit the wash sinks / dishwasher for adequate cleaning
      • Do not store anything under the cooking line to ease cleaning and monitoring of pests

      • Observation (CORRECTED DURING INSPECTION): No sanitizer was ready for use in the kitchen at time of inspection (1145am). Wet towels for food contact surfaces left on counters.
      • NOTE: this is a REPEAT infraction from the last routine inspection on August 30, 2021
      • Corrective Action(s): Have your sanitizer bucket reservoirs ready first thing in the morning. Leave the rinsed out wiping towels in the bucket when not actively used to minimize bacterial levels

      • NOTE: again this infraction was observed back on August 30, 2021 -continued infractions will require increased enforcement such as tickets or closure

      • Observation: A few mouse droppings observed in the dry storage room under the shelves and behind the boxes. A review of the last pest control report from Spruce Pest Management dated May 26, '22 indicates rodent activity.
      • Corrective Action(s): Remove all foods off the floor -place more multi-tier shelves in there with the lowest level at least >15cm off the floor
      • Keep all lightly packaged foods such as paper, nylon and plastic in rodent proof containers (lids shut tight)
      • Clean and disinfect all floor areas there

      • Observation (CORRECTED DURING INSPECTION): Operator observed preparing the skewered foods -various perishable ingredients out at room temperature: cut vegetables. Operator indicates that the perishable ingredients are placed back in the fridge afterwards
      • Corrective Action(s): Only take out small portions that will be used up within 2 hours -DO NOT PLACE BACK IN THE FRIDGE. Any leftovers discard.
      • Ideally all the perishable ingredients should be assembled at the preparation cooler inserts.

      • Observation (CORRECTED DURING INSPECTION): No sanitizer for food contact surfaces available for the kitchen or the bar area. Filthy wiping towels left on counters in the kitchen
      • Corrective Action(s): As per your Sanitation Plan you must have a sanitizer in use all the time. The rinsed towels are to be kept in the sanitizer solutions when not actively used.
      • Do not mix bleach and QUAT sanitizers -use one or the other
      • QUAT sanitizer dispenser measured at >200ppm as per test strips
      • Bleach sanitizers must be maintained >100ppm as per test strips
