- Hand wash sink at the bar was not fully supplied with soap for hand hygiene.
- Ensure to supply with liquid soap and paper towel in dispenser at all times. Encourage food and beverage handlers to wash hands as much as possible. Corrected during the inspection.
- Critical Improper Cleaning, Sanitizing of Equipment and Utensils
- Glass washer tested 0ppm Chlorine after 2 tests. Test strips are available on site. Left side (where glasses come out), plastic strips on the washer that touch the glasses as they come through have some black residue and feel slimy. New bottle of chlorine did not appear to be pulling through.
- Fix and ensure glass washer is dispensing 50-100ppm chlorine during final sanitizing rinse cycle. Comments Food Handler Hygiene: Operators had clean clothing for food preparation. Food Safety: Food in cold holding Coolers are below 4C. Hot holding hot dogs in warmer are greater than 60C (70.0C) at the time of inspection. Approved Food Source: food ingredients are from an approved source. Food is stored in covered containers. Maintenance and Sanitation: Dishes are being rinsed and soaked in detergent before going into the dishwasher. Ensure to use the main dishwasher in the kitchen for cleaning/sanitizing dishes when the glass washer is not working. Condition of equipment and surfaces: food contact surfaces and equipment are in good repair and clean condition. Pest control: there are no signs of pests at the time of inspection. Administration: Staff is certified in food safety.
